The Coconut fruit cake is uniquely dense yet spongy texture its not dark in colour, rich in taste; this is the cake that takes the cake!
The main ingredient- dried macerated fruits. Prunes, currants, raisins, mixed peel and cherries are minced finely then soaked in red wine and Wray and nephew white rum with aromatic flavourings and warm spices and coconut.
