Food has always played a huge part in my travel experiences, it gives me an opportunity to step out of my comfort zone. Not every meal is a hit, and some even come with their fair share of blandness (if there is such a word)…. Hello!… But more often I’m surprised to find myself falling in love with dishes from every country I have ever visited. So here are some of my favourites!

Jerk Chicken, a spicy grilled-meat dish mostly associated with Jamaica but common throughout the Caribbean. Jerk refers to a style of cooking in which the main ingredient—which most often is chicken but may also be beef, pork, goat, boar, seafood, or vegetables—is coated in spices and slow-cooked over a fire or grill traditionally composed of green pimento wood positioned over burning coals; the resulting smoke is key to the flavour of the dish.
